In the last few weeks I have gotten the opportunity to bake. I love baking and get super excited when I find a new mix to try. I had heard that Betty Crocker was starting to make gluten free mixes from social media. I decided to see if my target had any and in fact they did. I was able to pick up a few different kinds including the white cake mix, cookie mix, and brownie mix. This last week I was able to try two of these. The white cake mix and the brownie mix.
Now these are not by any means super big mixes. The white cake mix only makes a one layer cake unfortunately or two really thin layers and then the brownies don’t make as much as other mixes. This is to be expected though since often you may be baking only for yourself if you do have celiac disease. I on the other hand get to bake for two as the boy has celiac disease as well. I made the white cake first and added lemon pie filling to the mix to make it a lemon cake. This made it super moist and delicious especially with added Cherrybrook frosting. Which keep in mind is dairy free as well and super sweet, but still every bit as tasty. The family was a huge fan of this cake and we finished it off in one sitting. In fact my non-celiac sister loved it so much she ate half the cake on her own! This was a shocker but that means I knew it was good even for a gluten free and dairy free cake. I even took a risk and made lemon bars out of the white cake mix. This was kind of a throw it together recipe and boy did they end up turning out great!
Next I made the brownies which I loved because they had chocolate chips in the mix already! I love biting in to chocolate chips when I am eating a brownie so it was definitely a win in my book. I sent the boy back with some which I am sure he was love as well.
These mixes I believe I paid $4.29 each. Which is definitely pricy for a baking mix, but pretty reasonable when it comes to gluten free mixes. The only thing is these mixes definitely weight less than some of the other mixes for sale. So that does play a role in why the prices are cheaper.
