This year Thanksgiving was filled with love, stress, family, and a hectic week. I can’t believe this is my second year making the Thanksgiving meal completely allergen friendly, at least as far as allergies go for my boyfriend and me. We had a meal filled with laughter and no qualms over the gluten free, dairy free meal everyone had in front of them. The meal was filled with praise and my new found hope that I can cook a meal that everyone enjoys with only a few flops here and there. I’ve laid out below exactly what I did this year to ensure a delicious celiac friendly meal that everyone would enjoy.
Now let’s get started with prepping beforehand. Make sure that when you are planning a meal this big you make a list of all the dishes you plan on making and everything you need. This was something I made sure I did this year since I had lacked in previous years on having all ingredients on the big day.
Let’s first start off with where to get the turkey and ham. We bought our turkey breast and ham from Costco which are both labeled gluten free right on the package. For both these you just need to heat up the day of Thanksgiving. These were both enjoyed by everyone and we made so much turkey that I ended up getting to take a whole breast home for the next week!
ORANGE JUICE SALAD
2 envelopes unflavored Knox gelatin
3 cups orange juice with pulp
4 tablespoons granulated sugar
dash of salt
1/3 cup lemon juice
1 9-ounce can crushed pineapple in juice (not syrup), drained, reserve liquid
2 cups halved red grapes
1/2 cup chopped walnuts or pecans
1/2 cup chopped celery
Soften gelatin in 1 cup orange juice.
Dissolve sugar in 2 cups very hot orange juice and add to gelatin-orange juice mixture. Stir till dissolved.
Add dash of salt, lemon juice, and juice from pineapple can. Stir.
Chill in refrigerator until mixture begins to thicken. USUALLY 1 1/2 HOURS BUT BEGIN CHECKING AT 1 HOUR.
Fold in drained pineapple, grapes, nuts and celery.
Return to refrigerator to set.
2 bags of petite frozen green beans or fresh green beans
1 pound of bacon, pre-cook (or however much you want)
Gluten Free Onion Strings
Add green beans to a sauce pan with ½ cup – 1 cup of water and pre-cooked bacon. Cover with lid and cook until desired tenderness is achieved.
Add salt to taste.
In serving dish top with gluten free onion rings and serve.
7 cups gluten free cereal of your choice – Cheerios, Rice Chex, Corn Chex, etc…
1 ½ sticks earth balance
1 ½ cups brown sugar (un-packed)
1 ½ TBSP corn syrup
Mix-ins of your choice – marshmallows, raisins, chocolate chips, etc…
Measure 7 cups of desired cereal into a large mixing bowl.
Add earth balance and brown sugar to a sauce pan and stir until boiling.
Add corn syrup and continue to simmer on low-medium heat for 3 minutes.
Add mixture to cereal and stir until coated.
Add desired mix-ins and then spread out on a sheet of parchment paper until cooled.
Break apart into pieces and enjoy!
