Boy did I have a crazy weekend filled with loads of baking! While I have used Namaste Mixes before (mainly the pancake and waffle mix) I decided to purchase a 6 pack of the Muffin and Scone Mix to try it. Now I am not a big fan of scones so I basically had pre-determined I would just be making lots of muffins and mainly blueberry since we had a huge bag of frozen blueberries. Upon receiving the mixes in the mail though the recipe on the side of the box to make scones seemed so easy I thought I must try it at some point. Considering I already had the Earth Balance soy free buttery spread in the fridge to use up.
First though I made three boxes of muffins with about a cup of blueberries added to each mix. This amounted to a total of 36 muffins. Exactly 12 muffins for each box. After the third box I had finally bored myself from so many muffins I decided it was scone time. I was nervous that I would just have to throw them out since I just absolutely hate how dry scones can be. Upon starting though I was getting excited, the mix felt moist with the Earth Balance and the dough was really coming together. I slapped it on the cookie tray, shaped it into a circle, and cut the slices. I ended up needing to bake it quite a few minutes longer than the box said and I think this was because I added so many blueberries. Finally they were done though and I pulled them out. After letting them cool for a couple minutes I slowly cut and pulled them apart and immediately devoured one. They were moist and delicious. I loved the buttery flavor they had that I just don’t seem to get anymore in baked goods. I was shocked at how soft they were. Even the boy was a huge fan and said they were still soft two days later and perfect heated in the microwave for a few seconds. He loved them so much he said I could open up a bakery selling these scones (he hates scones to by the way). So with that comment alone I will definitely be making these again. I would highly recommend giving this mix a try along with their pancake and waffle mix which makes some of the best waffles I have ever had. They are always more popular at the breakfast table than the glutenous filled waffles!
Now I can’t forget to mention that at the Gluten Free Allergy Free Expo in Chicago I was lucky enough to snag a box of their sugar cookie mix and decided I will make those as well. On the back they had a variation you could do to the mix to make mocha thumbprint cookies. These sounded amazing so I opted to do these. All I needed to add in addition to the base eggs and oil was cacao powder and jam in the middle of each cookie. I opted to use homemade strawberry jam and boy did these turn out great as well! I was quite surprised at how well the chocolate flavor tasted with a fruity jam. It all just meshed so well if you buy a box of this mix make sure to give on the variations a try on the back of the box! Trust me, you won’t be disappointed.
